A delicious treat that kids will love, we call it “Grammy Moussies”.

Here’s the story, it was my daughters 4th birthday and I baked her a strawberry cake.  At the last minute she decided that she did not want the white icing that she previously requested.  So I decided to top the cake with strawberry mousse.  I pretty much knew what was supposed to be in strawberry mousse, but not how much.  So if you are a professional chef or something, don’t get all fussy with my mousse!

Anyway, I made way too much mousse for her cake, so some went on the cake to and the rest back in the freezer.  The great thing was that all the kids absolutely loved it… grown-ups too.  They actually ate the mousse-topped cake with a little mousse on the side instead of ice cream.   My kids requested more the next day so I whipped it up, but the cake was gone.  So we spread it on some graham crackers and the rest is history.  It’s a family fave!

Strawberry Mousse:

In a large bowl use mixer to blend

1 ½- cups sliced fresh strawberries

1- 8oz package of light cream cheese

1- cup confectioners sugar

Once smooth, fold in

1- 8oz package of whipped cream

Then place in freezer 30 min to firm slightly.

Spread on any flavor graham cracker and get ready for a yummy treat. Enjoy!

Tip: Leave in the freezer longer to freeze completely and it tastes better than strawberry ice cream!

So this same recipe can be used to top cakes, spread on grahams, or substitute for ice cream… now that’s good!
